An Indian dessert, Ras Malai has ranked second in the “Top 10 Best Cheese Desserts” in a list released by Taste Atlas, a renowned experimental food and travel guide. Ras Malai is originated in West Bengal and is known for its delicate cheese dumpling soaked in saffron-infused milk syrup.
What is Ras Malai?
Ras Malai is a dessert crafted from simple ingredients like milk, white cream, sugar, and chenna (a type of paneer cheese). Its name is derived from the Hindi word ‘ras’ meaning juice and ‘malai’ meaning cream, perfectly encapsulating the essence of a Bengali dessert. According to Taste Atlas, the best Ras malai can be had at Farzi cafe in Mumbai.
Poland’s Sernik ranked First on the List
Poland’s Sernik topped the list which is a dessert made with two a special type of curd cheese, egg, and sugar, often accompanied by fruit and jellies.
The third on the list is Greece’s Sfakianopita, a pie dish filled with creamy local cheese served with cinnamon and honey.

How to Prepare Ras Malai?
Preparing Ras Malai is very simple and requires very few ingredients and minimal effort.
First, gently knead paneer cheese until smooth divide it into small portions, and sharpen them into flattened balls. For preparing syrup, simmer milk with sugar and infuse it with saffron strands for delightful color and aroma. Once the syrup is made, gently pour paneer balls into it and cook them until they double in size and become soft and spongy. Remove them from the milk and allow them to cool before refrigerating.
Garnish the chilled Rass malai with a sprinkle of cardamom seeds dried fruits or saffron for additional flavor and texture and then serve.
